We all know that it can get very expensive living and studying abroad. Between all the eating out at delicious restaurants that are impossible to resist, and the indulging in nightlife on top of that… we ask ourselves where did all our money go?! Here is an amazing recipe that will cost you under 10 euro at the grocery store and give you left overs that are even more tasty the next day.
Sausage & Peppers (4 servings)
Ingredients:
2 packages of sausage (@around 2.50 each)
2 peppers (one red and one green or yellow)
1 white onion
1 package of mushrooms (optional)
2 tomatoes
1 package of brussels sprouts (optional)
Salt/pepper/garlic powder
First wash and cut in half the brussels and toss them in a little olive oil and salt/pepper/garlic powder. Place cut side down on a baking sheet and roast in oven on high until tender and crisp. Meanwhile slice up your onion and peppers and place in tin baking dish with a touch of water and stick them in the oven as well. On the stove top brown and cook the sausage until cooked through.. when mostly cooked dice up tomatoes and toss them in the same pan. In a separate pan sauté the mushrooms. When mostly cooked put it all together which should start making a little saucy base. Cut open the sausage and make sure it is cooked. Take everything out of the oven and toss everything in your large saucepan with the sausage and then all back in the casserole baking pan. Cover with tin foil and put back in oven on medium until everything is cooked down and tender. ENJOY!
